COSTA RICA EXTRA – Since last November an Escazú restaurant offers a new option in the healthy foods market.

RAW Company serves up “raw food”, prepared with fresh ingredients, which have not gone through the cooking process or whose temperature does not exceed 45 degrees Celsius to avoid their nutrients from deteriorating, explains chef María Elena Murillo.

According to Murillo, soups, salads, desserts, breads, smoothies, etc. can all be prepared fulfilling the requirements.

One of the specialties of RAW are “Press Cold” (cold pressed) juices. Each bottle can have up to a kilo and a half of vegetables. The most popular is the juice called “Hot Mama”, a citrus composed of pineapple, lemon, tangerine, ginger and cayenne.

Humus based zucchini spaghetti and vegetables is one the products that customers seek, said Murillo. “People are very interested in knowing what they are eating,” Murillo said.

The juices are priced at between ¢1.500 and ¢3.000 colones, according to the size of the bottle, and a dish of the day and dessert, is ¢5.000, Murillo said.

RAW, located in Plaza del Río, Escazú (on the old road to Santa Ana, across from the Banco Nacional) is open from Monday through Friday from 8:00am to 7:00pm, on Saturday from 8:00am – 2:00pm.

All options are gluten-free, vegan and raw.
