COSTA RICA EXTRA (By Ariana Crespo, Vozdeguanacaste) – Ligia Solis Lezcano came to the community of Samara 25 years ago, and, passionate about cooking, she learned traditional Guanacaste recipes for tourists to savor.

Four years ago, the administration of Intercultura Language School suggested that she serve lunches during recess, and since then she has been doing so nonstop from Monday to Friday next to the school.

The students only have 30 minutes, so right at noon she gets out a tablecloth and a folding table and starts to serve fresh food with her daughter’s help.

Lunch costs ¢2,500 ($4.60) and includes a natural juice drink and a mixed salad. Some of the options include casados with chicken, beef in sauce or steak, fried fish fillet, pasta with vegetables, lasagna in a white or red sauce, cannelloni filled with beef or tuna, barbudos (egg patties with green beans), or spinach patties for those who don’t eat meat.

Every day she makes something different. “People come here from all over the world, so I cook a variety for all tastes,” she said.

In the community, Solis is well-known for her lunches and also has clients at hardware stores, Pali and the bank. Those looking to try her cooking should arrive early, as her food sells out in just a few minutes.
