El “Copero” de Alajuela

Anyone who has visited Costa Rica will have seen a “copero”, that guy  shaving off a big block of ice, shaping it into a plastic cup and then pouring in syrup, powdered and condensed milk for a delicious treat.

In the streets, plazas, at popular events and in city parks, they are part of Costa Rican culture.

My question, with all the heat, how do they keep the ice from melting? If someone can explain that, would very much appreciate it. Rico.
